Jamaican Grilled Chicken Wings

In our family, we love spicy, flavorful full foods. This recipe is slightly spicy and full of wonderful flavors that will have you thinking you’re sitting on a sunlit, sandy beach in no time. It’s inspired by a recipe served at a Caribbean style restaurant The Texan and I love, and miss dearly since we’ve moved to Cape Cod.

Be sure to plan for this recipe, as you’ll need to marinade the chicken at least 2 hours.

Ingredient List: (Just a reminder, these are approximate measures. I do not measure when I cook, I simply eyeball, cross my fingers and hope for the best! It’s okay to use more of an ingredient that you like and it’s great to experiment by substituting ingredients!)

¼ cup Canola oil (any oil will do, just stay away from olive oil which flares up)
¼ cup low-sodium soy sauce
1 tbsp fresh thyme, chopped
1/2 tsp Cayenne Pepper
2 tsp Crushed Red Pepper flakes
Freshly ground Sea Salt and Black Pepper
2 pounds chicken wings (timesaver: buy the “wingettes” which are already cut!)

Preparation and Cooking Instructions:
Add all ingredients to plastic zip top bag and shake well.  Place in refrigerator for a minimum of 2 hours to allow chicken to marinade.  If you are able, marinade overnight for optimum flavor. 

Once the chicken wings have marinaded, grill over hot coals 20 – 25 minutes, turning once. If the weather in your area isn’t great for grilling, place them on a baking sheet lined with parchment paper (if you do not have parchment, aluminum foil is a great substitute).  Bake in a 400 degree oven for 30 – 35 minutes turning once. Serve immediately. {Note: To achieve the crispy texture you would have with a grilled wing, broil for a few minutes with your oven door open! Keep a watchful eye, though broilers have done a number on several of my meals in the past!}

Note:  On occassion, I dip my wings into a spicy barbeque sauce,  like Trader Joe’s Bold and Smoky Kansas City Style Barbeque sauce.   Enjoy!

  1. this sounds excellent. i need to try it on tuesday night which somehow became wings night around here recently. last tuesday i jerked wings. the tuesday before i barbecued wings. the tuesday before that i chopped up the wings and sautéed with bell pepper and onions in a wok. i was running out of ideas so thanks so much. i’m a no-so-horrible cook, i just hate cooking (and scrubbing the tub) in general. LOL

  2. I’m so glad I found this recipe. My daughter absolutely LOVES wings. I’m a pretty good cook but when it comes to wings, not so much. She’s always asking me to find a good spicy recipe. This is the new wing recipe I’ll try for her next week. Thanks again. :) Think I’ll make it with that fabulous Cole Slaw.
