Is your toddler a choosy eater? Mine is and that makes meal time a bit boring. I encourage my son to make his own healthy choices, yet his taste preferences often lead him to the same foods. Part of my job as a parent is to ensure he is eating a balance diet that is full of flavor and a variety of textures. He doesn’t like chicken or steak so finding a protein source that isn’t peanut butter has been a challenge.

I am excited that one of his favorite meals is black beans and rice. It is healthy and delicious. However, making it from scratch takes a long time because, as you know, cooking rice is typically an hour long investment. I recently discovered Minute® Ready to Serve Rice in my local grocery store and knew that it would be great for an easy black beans and rice recipe.

Easy Black Beans and Rice Recipe

After grabbing a can of my son’s favorite Cuban style black beans from the pantry and my package of Minute® Ready to Serve Rice, I got to work. I use the canned option because I wanted to save time. I never make my owns beans, it’s too time consuming.

I opened the can of black beans and placed a small portion into a microwave safe bowl, I reheated those for two minutes. When the buzzer rang singling the black beans were ready, I popped the container of Minute® Ready to Serve Rice into the microwave for a minute.

The final step was to combine the rice and black beans in the bowl. I stirred them well and let them sit for a moment before serving to The Boy. This meal took me less than five minutes to prepare and The Boy loved it!
