Friends, breakfast is a STRUGGLE at my house. The Boy doesn’t want to slow down for five minutes to eat breakfast. There is always “one more thing, Mom” to be built, drawn, or torn down. It’s crazy that he has THIS MUCH ENERGY after fasting for so many hours. But he does. And that’s where this quick strawberry jam comes in.
If it’s a portable, on-the-go food, he’s ready for it. Think apples, bananas, and sandwiches. BUT, he won’t eat an actual sandwich for breakfast [“Sandwiches are for lunch, Mom!”]. One day, I had this awesome idea to make a sandwich using Eggo Waffles as the “bread” with a favorite nut butter and jam squished in between.
Genuis? Probably not. Effective? Yes, because waffles are for breakfast!
While shopping at Target for all the things, I grabbed a box of the Eggo whole wheat waffles and some strawberries for the jam.
This quick strawberry jam is perfect for those busy weekday mornings when you want to encourage you little one to eat breakfast without stifling their creativity.
Clean, dry, and hull a quart of strawberries.
Try not to eat too many of them. I know they are delicious. Especially in late summer and early fall. [If you don’t have access to fresh strawberries, you can use frozen. Let the frozen berries thaw in the refrigerator, drain them well before adding to the sauce pan.]
If you like your jam without chunks of berries, puree the strawberries in the food processor or blender. Otherwise, add them to a 2-quart saucepan with about 1/3 cup of sugar and a tablespoon of freshly squeezed lemon juice.
Cook over medium heat, stirring frequently until the jam begins to thicken. This takes about 10 minutes.
Transfer the jam to a jar and let cool to room temperature. To store, seal jar with lid and place in refrigerator for up to 10 days. It doesn’t last that long in my house!
