Balsamic Grilled Chicken Skewers

Balsamic Grilled Chicken Skewers

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup local honey
  • 1/4 balsamic vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 TBSP garlic, minced
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • Cherry Tomatoes
  • Mozzarella Balls
  • Skewers
  • 1/3 cup balsamic vinegar
  • 1/3 cup honey

Instructions

  1. Combine first seven ingredients in a glass bowl. Stir well to combine. Cover with lid and refrigerate 30 minutes to overnight.
  2. Preheat grill to high heat setting. Grill chicken pieces until cooked thoroughly, about 3-4 minutes.
  3. Discard remaining marinade.
  4. Let chicken cool to touch.
  5. Begin assembling skewers by alternating cherry tomatoes, mozzarella balls, and cooked chicken pieces on wooden skewers.
  6. Meanwhile, prepare the glaze by stiring remaining balsamic vinegar and honey together in a small saucepan. Bring to a boil, reduce heat and let cook until mixture has reduced by half, approximately 10 minutes.
  7. Once glaze is reduced, drizzle glaze over prepared skewers and serve.
